Enchiladas
Ingredients
Serves 8 enchiladas
Safeway brand enchilada organic red sauce
2 chicken breasts
1 bell pepper
Onion
1 cup spinach
Flour tortillas
2 cups shredded cheddar cheese
Recipe
Preheat oven to 375°
Boil chicken until tender, let cool, then shred or slice.
Sauté all vegetables in olive oil for 5 minutes / lightly browned.
Place shredded chicken and sautéed vegetables in center of tortillas. Add equal amounts of shredded cheese and spoon enchilada sauce on side of all ingredients.
Roll tortillas up and place in ceramic or glass dish. Add enchilada sauce and the rest of shredded cheddar on top of tortillas.
Bake for 30 minutes
