Heat skillet and toss in Sausage until brown; drain grease
Heat olive oil and Pancetta until brown; stir in Celery, Onions and Garlic
Place Sausage and Pancetta mixture into bowl, adding Bread, Cornbread, Nuts and Seasonings. Pour in chicken broth and Mozzarella Cheese, mix until absorbed.
Add Stuffing to baking dish with Butter on top, cover with aluminum foil
Bake for 45 minutes and remove aluminum foil, cook for another 15 minutes. Add Sage and Parmesan Cheese.
